Terroir on the Plate

At Wortelgat, we embrace Wine-Dining rather than Fine-Dining.

It is a deliberate distinction. We are not trying to create a formal restaurant experience removed from its surroundings. Instead, Wortelgat is an intimate expression of Springfontein — where wine, food, season and landscape come together around the table.

The kitchen works closely with what the farm and its surroundings provide. During the high season, the menu changes with the seasons, drawing as much as possible from our own gardens and from the wider Springfontein Rim. Herbs, vegetables, fruit and other ingredients are grown, gathered or foraged according to what the land offers at a particular time.

The result is food that is deliberately rooted in its place: simple ingredients, carefully handled, with clarity rather than unnecessary complication.

In this sense, the terroir is not only something we pour into a glass. It also finds its way onto the plate — through the ingredients, aromas, textures and flavours that belong to this particular landscape.

Wine & Food

The wines are not an afterthought at Wortelgat. They are an integral part of the experience.

Our 5-, 6- or 7-course menus are built around a dialogue between kitchen and cellar. Sometimes a dish provides the starting point for the wine; sometimes a particular wine, grape variety or vintage leads the way and the kitchen responds to it.

The pairing is therefore not simply about finding a wine that “matches” a dish. It is about exploring what happens when the two are considered together — how wine can change the perception of a flavour, how a dish can reveal something different in a wine, and how both can express the character of Springfontein in their own way.

The experience unfolds course by course, with the wine and food developing alongside one another rather than following a fixed formula.
