At Wortelgat, we embrace Wine-Dining rather than Fine-Dining — a more honest, grounded expression of place, flavour, and craft.
The flavours that emerge from Wortelgat’s kitchen are without doubt a culinary highlight of the Springfontein experience. During the high season, our kitchen team creates seasonal magic, with most ingredients sourced directly from our own gardens and backlands.
The Springfontein family is deeply proud to showcase not only our terroir in the glass, but also on the plate. Simple, honest ingredients — foraged from the Springfontein Rim’s marshlands and fynbos landscapes — are transformed into dishes of pure expression and clarity.

In an elegant dance between glass and plate, wine and food complement one another, enhancing flavours and expressing Springfontein’s unique limestone terroir to its fullest extent.
In a rhythmic back-and-forth, the wine sometimes takes the lead, while at other moments carefully selected varietals from the Springfontein cellar are chosen to elevate and complete the dish.
Across all 5, 6, or 7 courses, this dialogue between kitchen and cellar creates a sequence of harmonies — a tasting experience where every “dance” finds its perfect partner.
